Ingredients
- 1 whole red snapper (3 pounds gills gut and scales removed)
- salt
- black pepper
- 2 heads fennel
- 6 sprigs thyme
- 2 sprigs oregano
- 1 lemon (thinly sliced)
- 2 tbsps extra-virgin olive oil
- 14 cup water
- 1 lemons juice
- 1 tbsp pernod
- 1 leaf fennel (reserved)
- 6 tbsps butter (pieces)
